i can safely state that you may not even NEED Amiibo's to unlock anything save for the unique weapons and the Paraglider fabric. i say this, due to owning the game, but none of the Amiibo, and i have found both the Fierce Deity Mask, and the Trouser's of the sky In game. whether or not the rest of the pieces are available in game, i cannot say. but the mere fact i found these without using an Amiibo? seems telling.
i cannot remember where i found the trousers. but the mask i found in a cave at skull lake in the Akkala region. the tallest eye, where there was a shrine in Botw, now has a very deep hole leading to a cave. the other eye is an entrance to the Deep.
the cave is full of Stal enemies. i fought roughly 5 stal Bokoblins, one Stal Moblin, and a Stalnox. then in a metal chest inside a litte shrine (not a zonai challenge shrine) i found the Fierce Deity Mask. 6 defence and a level 1 attack boost.
