I think the best shake-up would be for Mario Kart to follow Splatoon's lead.
And Octo Expansion-type story mode where they use the different racing mechanics for platforming/battling. Mission-based, since they would have to figure out the mechanics first. Eventually we could see sequels diving into open world.
Constant online updates to make the individual racers/karts actually matter, since most people don't really care about those that much.
Splatfest-type of events where we get new tracks.
With the story mode fleshing out movement/battling, a completely new competitive online mode.
