Personally I found it better how Red Dead Redemption 2 manage the extra stuff. All the extras are there but there is no map mark for those, you have to find them by listening the NPC in towns or around the world, sometimes you'll start a quest some other times you won't; but you'll know there's something out there somewhere and if you actually happen to be around that place you may find what people are talking about but is not necessary.
