The graphics might not be much to look at, but this basically Morrowind with the “do whatever you want” aspect cranked up to 11. Tons of objects can be granted sentience and conversed with. Doors, furniture, you name it. You can even swap your consciousness. Anything is technically a playable character.
Gravity Falls is a really good cartoon, up there with Legend of Korra and My Little Pony. Although those are both really strange comparisons. It's quality, is what I'm saying.
UbiArt is pretty much a perfect choice for the engine, too. It uses vector art and everything I've seen with it looks like an animated cartoon. Lots of smooth squashing and stretching and tweening that would otherwise be expensive or resource intensive to animate as sprites.
