Is all of the armor back from the SNES version?

Yes, all armor available in the SNES version of the game is also in the Switch remake. So

Are there any new pieces of armor in the Switch version?

No, there is no new armor in the Switch remake of Super Mario RPG. But that means gear planning is a little easier, at least!

What's the best armor for each character?

This is less easy to answer that the best weapons question, but there are certainly some better pieces of armor than others.

The Super Suit is the best all-around piece of armor in the game, boosting every single stat by 50 (with a Speed boost of 30). However, it's also incredibly difficult to obtain in-game.

In terms of pure defense, the Lazy Shell is the best suit of armor in the game. It hugely decreases many other stats, though, so it's a double-edged sword. That being said, you should use it on Peach, who has the lowest attack stat and is focused on healing for the most part.

Otherwise, the armor you get from Croco in Bowser's Keep, right before the final dungeon, is the best armor for each character.

Can you miss any armor?

Just like the weapons, no piece of armor is missable in Super Mario RPG. You also can't sell any unique pieces of armor, meaning that you'll never accidentally sell something cool.
