I notice everyone online chooses the wheel or the remote by itself. I have found these are the two most awkward controls. The nunchuck and remote setup gets the fastest and most consistent results for me.

I always use the wheel. It makes it more fun in my opinion. But I can see what you mean by it feeling uncomfortable for you. My brother uses Gc controller because he thinks that is the most comfortable. Everybody's different.
I use the Gamecube controller. The Wii wheel is fun and stuff, but the controller feels right to me, especially since the GCN controller is my favorite controller ever.
Wii Wheel. Some people say it's less responsive/accurate but it's just like any control method, the more you use it the better you get. And anyway, it's ten times more fun.
Wii Wheel by far. feels natural, and it WORKS!!! Just feels more fun to play, in my opinion.

I've never used anything other than a wheel, but I must say, the cheap-o one you can buy at Toys R Us, (white with a colored stripe) provides a little better control than the Wii wheel.
Nunchuk, I have Classic but it's not the best in my opinion because you can't use the D-pad and Left stick together (perform a trick and steer). The nunchuk: use the control stick (steer) and shake the Wii remote (perform trick).

I tried the Wheel once. It's innovative and all, and it works MUCH better than most people say it does, but I feel much more comfortable using a GC or Classic Controller.
Either the Wiimote by itself or with the Wheel. I just feel that it's the most natural way to play, and I believe it's the way Mario Kart Wii is meant to be played.
I tried the GC and CC controllers once: the CC was OK, but I didn't really like the GC scheme. It may just have been that I was unfamiliar with it (and the fact that I seriously dislike the GC controller).

I use the Wii Wheel only. It took me awhile, but I was able to unlock every character and vehicle using just the wheel, my proudest Mario Kart achievement.
