Bully is a great game, definitely reccommended (even though i played it on the 360 rather than Wii; some reviews have said the Wii version is actually better for some of the classroom activities).
The Godfather: Blackhand Edition and Scarface come to mind. I really liked The Godfather, and I've heard Scarface is better, but I haven't played it yet. I agree that this is a serious hole in the Wii's library as I love open world, sandbox style games. THQ should put a Saints Row game on the Wii. I liked Saints Row 2 a hell of a lot more than GTA4.
Agreed on Saints Row 2 vs GTA4. I enjoyed both games a lot, but had more fun overall with Saints Row 2. They announced a Saints Row game for 3DS, no? Curious how that will turn out.
Godfather was a great game. I still need to check out Scarface at some point, seeing as how everything i've read on it gives it much more praise than i would have expected.
The Godfather was a good game, but I remember hearing that Scarface on the Wii was not very good at all... Maybe it was a different game entirely.

Retro City Rampage might actually be a really good one. True, it's WiiWare... and true, it's 8-bit... but it sounds like it's going to be a hell of a lot of fun if it turns out as promised.
Just don't resort to the terrible Hulk port we got a few years ago.
Spider-Man: Web of Shadows wasn't actually a bad game. I played it on the PC, though, where it was a bit easier on the eyes. I remember it getting decent reviews, but I had an above-average amount of fun playing it. Maybe just me being weird, who knows?
Anyways... Godfather: Blackhand Edition. Anyone own this? Maybe we can talk more in-depth about it and see if it will satisfy some of these sandbox cravings. I remember reading a couple reviews years ago but they didn't explain a whole lot of intricacies about the game, mostly just that it's like Grand Theft Auto except there's some sort of melee strikes you do with the Wii remote...

It's GTA but with businesses you can extort to make more money and four or so rival gangs to get rid of, which usually end up being big firefights. The usual drive point A to point B, kill someone, etc. I thought that the most fun was extorting businesses and fending off rival gangs from taking your businesses. The story was pretty good, but I don`t recall the missions being anything to call home about.

Is the extortion and gang fights a constant thing, or does it end eventually after you do it X amount of times or reach a certain point in the story?
Gang warring is pretty dead after you've, well killed the other gangs if I remember correctly. (It's been a while since I've played the Godfather.) Once you've wiped out all the bases and fronts there isn't much left to do generate gang heat from unless you catch on of their occasional racket trucks. This takes a long while since they've got a lot of bases and fronts though.
As for extortion there is a limited number of places to extort and once you've got them all and wiped out the other families there isn't much left to take them away from you. There's a lot of them of though, and it's one of the more fun parts of the games since you get to rough up store owners who don't cooperate.
