This would seem redundant, but how about a Nintendo Racing like the one from Sega. It's redundant in that it'd feel too much like Mario Kart, but it's worth a shot.

Sounds cool, but yeah it would feel too much like Mario Kart. Plus, I really can't see Link behind the wheel of a go-kart. It just seems......odd. Maybe he could ride Epona somehow?

As you said, there is no real reason to make it because of Mario Kart. I'd much rather see something like a new IP, or if that's out of the question at least a new 2D Metroid.
And It can't have a really bad Mario to other ratio like Sonic had with the other Sega games. I would be happy if there were like 10 Mario Characters, and 15 non-Mario ones.

I imagine they could do a game like this; they could just make it another installment of the Mario Kart franchise, and just call it like Mario Kart: Nintendo All Stars or Mario Kart SMASH! (playing on the Smash Bros. name). Wouldn't have to make it a separate "franchise" from the main Mario Kart series.
"Super Smash Bros. Racing" or "Super Nintendo All Stars Racing" would replace the Mario Kart series, not both having their own series of games at the same time. Although it may be very similar to Mario Kart in terms of gameplay, it would be treated as a sequel and then become its own series properly. But it would have its own unique features too.
Each character would ride their own unique vehicle or animal. Mario would ride Yoshi, Link would ride Epona, Kirby would ride that Hamster, Donkey Kong would ride Rambi etc... but they would still pretty much control the same as the karts do in Mario Kart. Also, each character would have access to their own unique set of weapons. Mario would use fireballs and other power-ups he got in his games. Whereas Bowser would use various different Koopa Shells, Donkey Kong would use Bananas and Barrels, Link would use energy beams, boomerangs, bombs etc... and Captain Falcon would use guns and other bounty hunter type weapons. Even if their original game didn't have many or indeed any weapons for a particular character, then they would still use weapons that they would be associated with. Weapons are available just like in Mario Kart.
Courses too would be directly based on each character's particular game instead of simply being 'loosely inspired by but not based on any actual stage' as is the case of several recent Mario Kart courses.
So yeah, it would be pretty much Mario Kart without the Karts and not only Mario characters. But so what? The new variety is just what the Mario Kart series needs.
