I think all the NPC titles are done really well, especially Pikmin; it made that game even better. Arcade light gun games are always good on the Wii, too.
Predicting the future, I will say NBA Jam. I've heard nothing but good things about it.
I also hope the WiiWare version of Oregon Trail will be good.

Otherwise I'd say Okami. I don't know why everyone is complaining about the drawing. I never had a trouble with any of the controls through the whole game (except Fleetfoot, but that's barely useful).

Punch-Out! hands down, they did such a great job on the game, totally capturing the feel of the old games and enhancing it. The multiplayer was sort of lame, but you could tell it was just thrown in for fun.

My problems were with the fighting system, which is why I thought the PS2 version was superior.
I actually thought the complete opposite, but maybe it's just me.
