They'll have two different packs at launch. One has Nintendo Land bundled, and the other has the Pro Controller. I wish that they'd include component cables instead of HDMI (so i wouldn't have to switch my PS3 cable off every time playing Wii U), but instead the only cable we get is composite.

I doubt there'll be an HDMI cable included and I think Nintendo would go for a composite AV cable rather than a component AV cable, but it'd be a nice surprise if they did include better cables. I don't expect any pack-in software, but we could see some preinstalled software, who knows.

You'd think they really can omit the Wii remote and nunchuk to cut down on price. Every game will have the Game Pad as required default anyway so they'll be fine there. It would mean, however, that Nintendo will never base an entire game again or invest huge efforts in the Wii Remote's implementation as they have done with Skyward Sword, and that's sad. But, since you need these remotes for some of the games in Nintendo Land and in the general appeal, Nintendo WILL bundle them inside.
I expect it to come with the console and all relevant cables and sensor bar, the GamePad and all relevant cables/stands and whatever, hopefully Nintendo Land and possibly an SD card.
There's definitely going to be something missing. Doubt they'll bundle a game or they would have been raving about it, they probably won't do 2 different packages either (if they're iffy on colours I doubt they'd confuse things by adding in a pro controller!)
HDMI is a possibility, Wiimote/nunchuck is very unlikely. An SD card came with 3DS so could happen. I just think whatever they bundle there will always be one more thing people want/need omitted.
If they AV cables in the box are crap it's not going to bother me at all. I already have a spare HDMI cable floating around and you can get them for <$10 easy so I'll just go with that. It's a digital cable, they're all the same. Even without the HDMI cable the console will work with Wii AV cables so... just plug the same cable that you already use for your Wii. Simple.

I'll disagree with the Remote and Nunchuk for the basic unit, but I could see a "family" bundle that includes Wii Sports Resort and a Remote/Nunchuk (how do we know the Gamepad couldn't emulate the pair in a half-assed bit for backwards-compatibility?). I absolutely agree with the HDMI cable, however. I cannot see selling an HD system with a composite video cable when we're starting to see flat panel TVs on the market that only have HDMI input. Today is the opposite of the situation when the Wii launched where many people still had CRTs: there's probably still a number of them out there, but I seriously doubt we'd see people turned away from picking up the system because they didn't have a TV with HDMI inputs on it.
