I am new to Mario Kart well games in general so please forgive me if this is a stupid question. Is it slightly possible Kirby could ever make it to MK8? He is my favourite and makes far more sense in my opinion than "Metal Mario" etc, thanks for your time.
No, I don't think so. All characters in the standard MK8 roster are related to the Mario universe. (Donkey Kong is related to Mario, since Mario was battling Donkey Kong in the original game 6 billion years ago. Mario was called "Jumpman" back then.)
The DLC for MK8 breaks many rules of the standard game, such as introducing characters from the outside universes (Link for example). But no Kirby has been announced for the two DLC packs.
You can also play as Mii with a Kirby costume if you get a Kirby amiibo, however.

There could be more dlc for the game after the two packs are released so don't completely lose hope.
Does anyone know when the dlc will go live? I've heard several people ask this question on other sites, but do you think a Midnight release is possible or will it occur at 9:00 AM PST like it normally does on Thursdays?

Normal update time, which would be 9 AM Pacific Time for the U.S.
I don't have concrete evidence, but all other DLC has gone up at the normal update time, I don't expect this to be any different.

You can still use amiibo to have a giant Kirby on the back of your head, or there might even be more DLC!

There's nothing up in the air about it. There is no reason to believe that the DLC will release at midnight. It'll be at the normal update time, like all other DLC before it.

My game library ranges from Mario Kart to Call of Duty to Tales of Xillia to Diablo 3 to Forza. To me gaming is about having fun - not blindly supporting only one company while thumbing your nose at "the evil other systems."

Nintendo had never said that it would release at midnight. I don't know why a lot of people started thinking it would, because it never was like that in the past.

I know the release times, I had already assumed myself that the DLC would come when the eShop games go live at the Normal time, 2pm UK time.
I was just a bit unclear where everbody had got the midnight releasse from. By the looks of things, somebody said midnight release, and the rumour has gotten outta hand.
It appears that you may be right since Nintendo of Australia just uploaded the Mario Kart 8 DLC Pack 1 which said it was coming on the 14th while the 13th was listed in the Japanese direct. Going by Australia's eastern timezone, it seems like they will get it at midnight, 11pm in Japan, 2pm in the UK, 9pm Eastern and 6am Pacific. (If I have my timezones correct)
I believe your time zones are correct, but NoA updates at 9 AM Pacific here.
