I bought an external hard drive today. Unfortunately it's not one of those that has an AC adapter with it. It's a toshiba canivo connect. Will it still work with my Wii U? Or do I have to get one with an AC adapter? Thanks for the help!

A hard drive without its own power source relies on the Wii U to power it. As the Wii U power source is optimized for the console only, having this extra utility to power can be taxing. It may reduce the lifespan of both the drive and the console.
But yes, it will work. Even a regular old USB flash drive will work.

Not really. If you need to use a y-cable, there's no harm in doing so. It's no different than having 2 devices using 2 USB slots. The only difference is that you're using 2 USB slot for 1 device, instead of 2.
If your HDD is USB 3,0, make sure to get a USB 3.0 y-cable. I have a Toshiba Canvio Basic, using a y-cable, and it works flawlessly.
The only reason why they probably don't recommend it, is because they don't want to confuse consumers. If we were to listen to ONLY Nintendo's recommendation of HDDs, that would automatically make half of the HDDs "not recommended".
I know you said it will work, at the end, but all you really had to say was that they needed a y-cable.
If you're really stuck you can always buy a powered USB Hub. You'd be able to plug in a LAN adapter, any USB powered HDD, the GameCube adapter when it comes out AND be able to charge stuff off if including the Pro Controller all without having to use the front USB ports or for charging without even having to have the Wii U powered up. The best thing is you can grab one at pretty much any retailer.
