Shadow of the Colossus: A fantastic adventure game. Very atmospheric. Metal Gear Solid 2/3: Great stealth stuff. Those are the only ones I've played but I hear good things about: Ico (adventure), Ratchet and Clank (platforming), Rogue Galaxy (RPG) and Persona 3/4 (RPG).
Suikoden III, IV, and V are greate RPGs, and if you havent played them before the Lego Starwars series are great as well. If you are into fighting games Soul Caliber 2 is good too.

Platform: Klonoa 2, Jak & Daxter, Ratchet & Clank RPG: Oh God, where do I start...I guess Kingdom Hearts, Final Fantasy X, and Persona 3 would be the best place to start. Adventure: Shadows of Collosus, Beyond Good & Evil, ICO
RPG: Persona 3 FES, Persona 4, Shin Megami Tensei Nocturne, Odin Sphere, Grandia II, Kingdom Hearts 1 and 2, Disgaea: Hour of Darkness, Disgaea 2, Final Fantasy XII, Dragon Quest VIII, Star Ocean till the End of Time, and Final Fantasy X (even though it's pathetically easy and the characters are possibly the worst in the series, but definitely the most annoying).
Others: The first 3 Ratchet and Clank games, the first 3 Jak and Daxter games, Devil May Cry 1 and 3, Silent Hill 2 and 3, Shadow of the Colossus, Prince of Persia the Sands of Time, Okami, Zone of the Enders 1 and 2, all the Sly Cooper games, Klonoa 2, GrimGrimoire, Beyond Good and Evil, Psychonauts, Resident Evil 4, ICO, God of War 1 and 2, Burnout 3 Takedown, Metal Gear Solid 2 and 3.
Persona 4: best installment in the saga in terms of gameplay. A game that will surprise you every minute you play it. A must-have.
Persona 3: FES: improved edition of Persona 3 with more Social Links, Personas and a playable epilogue (The Answer). People argue it has a better story than Persona 4 (at least, it's darker) and better characters.
Dragon Quest VIII: a traditional Dragon Quest game. You'll love it if you like the saga, and if you haven't played any DQ game it's a good one to start with.
Odin Sphere: a 2D Action-RPG (you'll love the graphics, they seem to be drawn ).
Okami: a game with a reminiscence from Zelda: you'll like it if you're into action RPG's. It's placed in the ancient Japan.
Disgaea 2/ Phantom Brave / Makai Kingdom/ Soul Eater/ La Puccelle Tactics: games from NIS. They're excellent SRPG.
Suikoden III/V: avoid the fourth entrance, it's considered as one of the worst of the saga.
Atelier Iris 2/ Ar Tonelico II: they're both 2D RPG's quite similar to 16-bit RPG's but with a much more improved gameplay and great replayability.

Platformer: Ratchet & Clank: Going Commando - A very humorous platforming game with a large multitude of weapons, areas, and missions. Incredibly fun and completely recommended. RPG: Kingdom Hearts - Not a turn-based RPG, but still a must-have for any PS2 owner and anyone who wants to play every single gem for the system. Very interesting storyline, bright characters, fun gameplay and a large variety of areas make this a really fun game for anyone. Rogue Galaxy - A very, very large Action-RPG game with a huge storyline, fun characters, big planets, and a GIANT variety of weapons and items to craft and create. Recommended for anyone who likes long Action-RPG games. Adventure: Shadow of the Colossus - Amazing game. Great atmosphere, awesome music, fun exploration, epic boss fights. It's the complete package and a must-have for any PS2 owner.
