Free-to-play games generally don't require online membership on consoles. Instead, there will be a revenue sharing arrangement between the console maker and the game publisher.
At least that's how Genshin works on PS4 and plenty of other games already do on Switch.
@Bolt_Strike Aloy is a Cyro (ice basically) element in genshin, which suits her a lot because she was raised mostly in the tundra mountains, though she can't use the elements, it's a nod back to where she was raised.
On the other hand Link has used a lot of elements, so trying to use what they did with Aloy wouldn't work since Link because he's been raised in the sky (Anemo Link would be interesting) and in a nature (Dendro Link is probably not gonna happen maybe Geo). But my main reason I think Genshin wouldn't do Link is because a game like Genshin having all the characters say something even just when it rains wouldn't mix well with the silence Link would have.
@Matt_Barber there was actually a Japanese announcement trailer for the switch version like 2 years ago that had a switch online logo at the end so I assume they probably planned for switch online requirement but it could change.

I'm pretty sure they're still working on it, if you check the video descriptions on Genshin's Japanese YouTube channel it lists Switch as a platform, saying "coming soon".
Going to be honest, I think Sony bought the console exclusivity rights to keep Genshin off of the Nintendo Switch. That and the Switch not able to handle the 40 GB+ bloat that it has become.
