When opening most switch games, you select the game, select the switch profile and then the game loads, but for Paper Mario: Origami King, you select the game, the game loads and then select the profile. Is PM: OK the only game to do this and why does it do this?

It depends on where the game's developer put the profile check in their game's boot sequence. Most games have you select a profile before the game is launched. Others have the profile check after the splash cards (publisher, developer, engine, tools, etc). Some even have the profile selection after the title screen when you start the game.

The location of the profile check in the game code isn't uniform across all Switch games.

There are lots of games that do this. Luigis mansion 3, vs super mario bros, super monkey ball. I’m sure there are others

Games loads varies some load before asking which profile and some after that is all dependent on the game developer choosing. Just remember eShop games can only be downloaded by the account/profile that bought the game no transferring or reselling the game that's a NIN EULA violation.
