@markmarkmark I'm not super into RPGs, but I definitely like the Xenoblade Chronicles games, as others have mentioned. I did notice one game that no one has mentioned just yet, and that's Dragon Quest XI. From what I've played of it, it's really good for a traditional RPG. There's even a demo version that goes on for a good while, I think it's like 10 hours long.
@markmarkmark If you gonna go for RPG then i recommend starting with Xenoblade out of these, since you can easily play the first two games on the Switch already with the third game releasing next month. So, you can enjoy the complete Package!
Out of those not mentioned, i can't believe how nobody mentioned Pokemon Sword/Shield at all. It is more casual, but maybe you are not looking for the harder RPG experience.
There is also Fire Emblem Three Houses which you should get if you lean more into the strategic RPG kind of things. That one is loads of fun too!
Lastly for more action RPG style i would say Monster Hunter Rise and probably its expansion Sunbreak too will take the cake. You wont really find a great Story here but a really fun gameplay loop, play this with friends for double the fun!
Final Fantasy is a bit on the older side of things and i didn't play Dragon Quest so i can't really say what it is like, however i can't really imagine that you are not gonna love at least one of those four games above if you are into RPG's at all
Edit. I forgot about Shin Megami Tensei V. That one is turn based and more on the hard side of things. Maybe that is more to your liking? It also features great enemy interactions
I suppose it depends on what flavor of RPG you're looking for? The genre has sort of wormed its way into other genres over the years. All of the Xenoblade games are Nintendo-exclusive, so the Chronicles remake would be a good place to start on those. Mario + Rabbids Kingdom Battle (another exclusive) is a good tactical rpg.
Beyond the exclusives, Switch has a wealth of other rpgs. I maintain that Valkyria Chronicles 4 is the best (strategy rpg) game Sega have published in years. Diablo III is the best dungeon crawler from the past decade. Borderlands is perhaps one of my favorite first person shooters. And Labyrinth of Refrain is probably the closest you'll get to an Etrian Odyssey-like experience on Switch.

Lots of great recommendations in this thread, but perhaps quite overwhelming in volume!
I'll try and help you narrow this down...
When you say "RPG" I assume you are looking for something traditional/JRPG-esque, with a turn-based battle system (or similar) alongside a story-driven narrative etc
In which case, I suggest:
1) Dragon Quest XI
2) Xenoblade Chronicles Definitive Edition
You can't go wrong with either, but my pick would be XCDE. A slightly better story (IMO) and a more unique combat system. Also, XCDE would prepare you nicely for Xenoblade 3 which drops next month.
In addition to Octopath Traveller, I’d recommend Triangle Strategy, the only true RPG I’ve played on Switch so far. It’s amazing if you like RPGs for the story, it’s gameplay is also great but there’s not a lot of it, 60% of it is cutscenes. It’s an amazing game though, I’d highly recommend it.
