Need a hobby. NO ability to run/jump/fight (fingers just don't work like that). Advice on easy adventure or puzzle games to start with and more complex ones eventually? LOVE to get lost in a good story --- Thanks!
Gris is lovely, and doesn't have that many bits dependent on timing. Forgotton Anne [sic] is another game I would recommend.
Let's Go Pikachu / Evee is controlled using only one joycon, with a pseudo throwing mechanic for capturing the poor things. So you can play the game one-handed.
I would recommend rpg games like Fire emblem they are like chess where you choose an option and then an enemy chooses. Low physical barrier but a high mental one and a great story to boot
Top Games, Xenoblade 1 2 3, Nier A/R, Mario g 1 2, MGS5, Stardew v, Hollow knight, Yakuza , GOW 2018, Doom 2016, Dragon q 11, Bug fables, FE3H

Gris is a great one as it's a game that's designed so that you literally can't lose. It does have a few twitchy sections here and there, but failing them won't set you back much and the main point of it is that playing the game will tell you a story.
In similar vein I'd also recommend The Last Campfire and Spiritfarer.
Ace Attorney series is a really good one. It's a visual novel + puzzle game and pretty much every game in the series is available on the Switch. The Phoenix Wright: Ace Attorney Trilogy is a good starting point.
One of the best two-hour puzzle experiences I've had recently.
Switch Physical Collection - 1,120 games (as of March 22nd, 2023)
