As for series I find nostalgic, that'd be InuYasha & Dragon Ball Z. Seriously, I never tire of either one. No matter where they're at in the story, if either one is on, I'll put everything down & watch, lol (I usually go through all their movies once a year as well). I could even spend all day looking up info about the shows online, lol.
Rurouni Kenshin, Yu Yu Hakusho, G Gundam, Cowboy Bebop, Outlaw Star, Tenchi Muyo!, & Trigun are also good series that I find nostalgic, but I don't like them quite as much as the two series listed above.
As for more modern series, I'd say Fullmetal Alchemist: Brotherhood, Deadman Wonderland, Sword Art Online, & Soul Eater are the best I've seen.

Mobile Suit Gundam. Preferable all 4 of the OVA series (Gundam Unicorn has one more episode to go, but unless it's the worst episode in the history of forever, it won't be losing its top spot because the rest is just that good).
I'd do a top 5, but since it's liable to change soon, I'll wait a few days.
Never really big on anime, I liked some DBZ and Naruto grabbed my attention whenever I saw it on TV. Other than that, the only Anime that I've ever actually bought was the Basilisk series. Those were pretty good. That and Miyazaki movies.
