I'm looking into getting some sports simulators. I'd like every team to have throwback uniforms, both home and road. Classic stadiums or arenas would be nice, although generic "vintage" venues would be acceptable. Finally, hall of fame players would be great. Are there any games like that?

What system you interested in ? And what sport are you interested in ? A lot of the MLB and NFL games have thowback jourseys, Hall of Famers or Legends if you will.
I would start with Sega's classic sports games. They have alot from Tommy Lasorda Baseball, Joe Montana Football, and David Robinson Basketball. Next look for old Sega EA titles such as Lakers vs. Celtics, NHL Hockey and of course the early Madden titles. There is also a NFL legends Sega CD title that features Cowboys vs. 49ers.
