To say he played the same role all the time is a bit unfair because even now most actors play variations on the same role. Johnny Depp, just as an example from this thread, pretty much always plays an awkward, kooky but charming character.
The reason he's revered is that he defined the role. The cowboy archetype was shaped by him. But looking back he wasn't that great of an actor but it's easy to look back and label something cliche when in fact those cliches originated from that work.
