The prettiest bullet-hell shooter on Switch would probably be Shikondo: Soul Eater, a Korean shooter made by one guy, with a striking late-Edo period Japanese theme. Doesn't support tate mode, unfortunately (at least, if it does, I've never been able to find it in the options).
