I'm looking for a Switch controller to use in docked mode. Generally the Pro Controller does a great job but it's not suitable for games which use the D-Pad extensively. Are there any controllers which are good for games like Hollow Knight and Celeste? Preferably one which supports HD-rumble and gyro. I've tried the Nitro Deck already and don't like it.
The Guilkit Zen Pro controller is all you need. It's even better then Nintendo's own pro controller plus it doesn't cost as much. I have one and it's the only controller I use for my Switch.

Wii U Pro with a converter like the 8bitdo adapter, assuming yours doesn't drift
Or for DPAD heavy games, i know no better choice than a SNES Classic controller (the wii edition you could get through Club Nintendo back in the day, or you can get the one that sold with the SNES Mini) connected to a Wiimote and then connected to the dock with an 8bitdo adapter. But at that point you're probably better off just tracking down the official Switch ONLINE SNES controller...
