I have my launch grey Joy-Cons, that have developed drift and are only used for Ring-Fit now.
I've got Neon Red L and Neon Blue R which were bought separately and are still good.
And recently I've got a pair of modded Atomic Purple Joy-Cons, the left one has a d-pad instead of buttons and the right-one has Super Famicom style red/yellow/blue/green buttons.
It's a very nice pair of Joy-Cons that I look forward to attaching to a Switch OLED next month. The d-pad doesn't have a pivot so it still allows opposing directions to be pressed, but is more comfortable for use than separate buttons.
All of my various consoles and controllers are just black or grey.
Kind of makes it difficult to pursue a PS5 with any kind of enthusiasm.

I've got them all. I've been procrastinating about gathering them all for a family photo but will try to do so soon. My favorites are the Animal Crossing pair and the Zelda pair.
I have R/B and Second B/R Joycons and Zelda JoyCons only and NES and SNES JoyCons. I don't have that many hands beyond the two attached to my arms to play all of them. And have two Poke Ball JoyCons for Pokemon as well. So I got plenty to use. I know there are collectors out there that will always get all of them and that is something they do.
Currently have the Super Mario red from the Odyssey bundle and a gray pair, though my brother bought the Skyward Sword ones and intends to get the white OLED
I currently own DQ Navy, Neon Green, and Zelda indigo and blue.
I have owned the splatoon set (before dual green came out in the US), the mario party set and grey(launch set).
I am thinking about a custom gold and black Zelda set though.

Two two neon red, one neon blue, and one cobalt blue. I used to have two neon blue, but when I sent one in for repair, I received the cobalt one in return. I'm not complaining.
@gcunit the cardboard trick fixed most of the drift, but making small precise movements is still pretty annoying, and all around the sticks seem to be a bit off-balance even after calibration. Gyro is also weird, making any games that use it very hard to control.
For example, if I open Ring Fit, on the title screen, the on-screen ring and band are supposed to mimic your real position, but the ring is permanently turned about an extra 15°~25° clockwise. In fact, I was completely unable to start the game when I got it, I couldn't complete the initial ringcon setup/tutorial at all until I used my brother's joycon.
