This is a bit of an unorthodox choice, but I played a Worms game at my friend's house a few weeks ago, and I think that would be well-suited to the Switch.
I don't see anything unorthodox with that.
If Team 17 does not see the potential in bringing their own biggest franchise WORMS to the Switch they must be blind. However, as they're the publishers of Switch games Overcooked! Special Edition, Yooka-Laylee, and The Escapists 2, chances are that they bring out a new WORMS in the Switch's lifetime.
WORMS had been on almost any console, and it has a history on Nintendo cosoles as well: It started with the original on the SNES and Game Boy (which I played plenty of), and then came the excellent Worms Armageddon for the N64 (which I loved and stands as my favourite version), and then came a pretty poor port for the DS, and two flawed ones for the Wii (WORMS: Battle Islands was essentially a WiiWare port that was 41MB and couldn't fit under the 40MB limit, so they burned it onto disc, instead of making a proper disc port of that game).
WORMS is one of the best multiplayer games of all time, and everyone should email and twitter Team 17 to bring it to Switch!
Probably never happen, and I'm not sure why I just thought of it, but I played a goofy little game on the Wii called Little Kings Story that turned out to be a really enjoyable game. I'd play a sequel to that. I'd even play a ported version of the Wii version.

Oh yeah, I'm glad to have many high class oddities like Little King's Story, Dokapon Kingdom, Okami, Opoona, Fragile Dreams, Eldar Saga, Sakura Wars, Another Code R, Endless Ocean 1 & 2, Muramasa, Disaster: Day of Crisis, Zack & Wiki, Boom Street etc. etc. in my minty Wii collection.
I don't think I'm missing any true Wii gems within the 200 games I have on disc, but I love when I find weird Wii games I've never seen before like Radio Helicopter or Legend of Sayuki that have a certain N64/SNES charm and quality to them. The last game I added was Klonoa. Everyone said that the Wii version is a must have but I haven't had time to sink into it yet.
A remake of or sequel to Little King's Story would be great in HD.
The tiny characters would benefit from the resultion bump just like the Pikmin did in Pikmin 3.
@SKTTR - Out of that list, curious if you got Victorious Boxers on Wii. Only boxing game that got me to literally throw actual punches to play the game, it took me for a loooong and grueling ride.
That being said, I would like to see Punch-Out!! return with a new game, but I would settle for the Wii port. It's no genuine boxing game, but it's great fun.
Now that we're on the topic of fighting rings. Curious how many people other than I would like to see more on Nintendo's Wrestling franchise from the NES era.
I only have a few specific (and non-specific) wishes for the Switch:
-A better Virtual Console than what existed on Wii U and 3DS. The addition of Gamecube titles (with a reasonably-priced Gamecube controller, similar to the one released in conjunction with Smash Bros Wii U).
-The revival of a few long-dormant franchises (F-Zero, Punch Out, Advance Wars, etc.)
-Less of a reliance on lazy ios ports.
-Influential third-party developers prioritizing the Switch (*cough, Capcom. *cough, EA) and not exploiting the user base with lazy ports that do nothing to push the system.
-Out-of-left-field surprises.
-The rumor of the Dark Souls trilogy coming out on Switch to become a reality (I've plowed through them all, including Demon and Bloodborne, but I would kill to have at least one of them on Switch! Even a Dark Souls 1 and 2 double pack would elicit a squeal!
-The further additions of old arcade games. My favorite thing about PS3/360 was the awesome selection of retro goodness! TMNT, The Simpsons Arcade, X-Men, the Final Fight/Magic Sword comp, etc. Strikers 1945 was such a welcome surprise, and I would love to see games like Gunbird, and other bullet hell games, to pop up! I suck at them, but it's one of my favorite genres!

Looks like that wish came true!
I'm sure this has been said already, but I'd love for the main Kingdom Hearts games to come to Switch. Failing that, new WarioWare and Animal Crossing games would be lovely.
My life would be a little more complete with a new Animal Crossing. They're probably developing one at the moment. The Switch is the perfect system for a new Animal Crossing title and it would sell like hotcakes.
I would play the **** out of it 24/7. I'm so looking forward to playing Animal Crossing in my bed. Fishing under a starry night once again, so relaxing.

@Tibob - Going to be honest, I've debated whether or not Nintendo should collect the 1080 and Wave Race franchise together to make it the next big step in the series. Since they're the same characters and universes and all.
But that can be risky to be cutting a "full game" experience from either side. Would love to see either/or to release though, especially both.
But let's raise another one to that. Blue Ocean.
Surprised, now with social media sharing, that this game won't come up as an idea to revisit. I mean they already saw potential for a sequel (and the scrapped space one), and obviously hasn't reached all the fish of the world, either.
So I don't want this to sound like an advertisement, but I just gave some serious thought of a wish I would love to see on Switch. The issue is this company has been working on this game for a few years, but nothing too substantial due to incredibly low funding (namely getting overshadowed on KS because Psychonauts 2 and various other hindrances).
Blubber Busters, the team and their project has been something I watched grow from a personal pet design project on Polygon forums to this interacting video game. And the more I watch it progress, the more I want it a reality. Hell, even moreso on Switch to boot!
The game is called Blubber Busters, not sure if anyone else has seen it, but it's been slowly going for the team for some time. But their art, style, and their alpha demos have all been impressive for their stage of development. Though it's been unfortunate for them as it has been going with a failed Kickstarter and a couple publishers dropping off early in their talks. They since then opened a Patreon, to attempt to get something going for them at least.
It's funny though, that this game has had some struggle whereas the indie game Smash Bros has their main character in it and hit its funding handedly.
So, I recently saw a game on itch.io called pinbrawl (Link: https://northernheart.itch.io/pinbrawl) and I think that once it gets a full release, it would be the kind of thing that would be great on Switch.

@Scrummer - Just watched some footage. Going to be honest, may not be my kind of game, but it synergizes well with four single joy-cons. That's definitely up Nintendo's alley.
