I agree on the shake thing... Even when I use separate joycon controllers, I still end up using the Y button to spin.
I think attempting to emulate the original controls with the joycon just emphasizes how lacking they are in comparison to an actual Wiimote and nunchuck. I tend to just use a pro controller, and I find that leaning in to that control style just ends up feeling better in the end. Gyro works great with a pro controller once you stop thinking of it like a direct replacement for a Wiimote pointer.
Personally I am just happy to not have to shake. That gimmick was briefly fun but I was over it ages ago.
I'd argue it depends. I think the shake is superior in feel for stuff like launching yourself from stars and such. I also don't mind it for the "tennis" type bosses. But for stuff like throwing fireballs it's a bit unnecessary
The one action I tend to swap between the two but is the actual attack. For bosses and crystals I tend to prefer the shake action because it feels a bit more "final" somehow. It's also satisfying to just whack Bowser or some miniboss around physically rather than just using a button. But for a simple Goomba or something..... the button works fine
