Okay, I really had a massive games backlog with my (still great) Wii U and skipped everything for Switch until this point. Now, I saw the Switch Mario Edition and immediately thought that this has to be the turning point. I have preordered it and plan to start playing Switch games in February.
Therefore, which game from the past years would you recommend for me? I do not have a lot of time and would probably mostly play in portable mode. I do not want to play any Wii U Deluxe versions or anything that it just a remake of an old Nintendo game. I am also open to small Indie games that didn't get a Wii U release.

I wouldn't really know where to start for recommendations without having something more specific to go on at this point as there are hundreds of good games to choose from on the Switch at this point.
I'm in a similar position where I don't spend much time playing games. Some of the great shorter and unique experiences for me so far are Brothers: A Tale of Two Sons, Gorogoa and 198X.
I've bought a few from https://www.nintendolife.com/guides/feature-best-nintendo-swi... - I'm not that impressed by Untitled Goose Game so far. I hoped it was more free-sprited, but you get a list of things to do, which I guess you could figure out for yourself instead.
Mario Odyssey and Breath of the Wild are awesome, though I'd probably 'only' give Odyssey an 8/10. New Donk City is one of the most fun Mario levels ever though.
I love Full Metal Furies too - it's better than the more well known Castle Crashers in my opinion.
Platformers: Super Mario Odyssey and New Super Lucky's Tail are really good, Super Mario 3D All-Stars might be worth a look too (two of it's games are playable on Wii U, though not in HD). Yoshi's Crafted World & Kirby Star Allies are decent, though nothing revolutionary.
RPG's: Xenoblade Chronicles 2 & the Torna expansion/prequel most definitely (maybe Xenoblade Chronicles: Definitive Edition too, as while the Wii game is playable on the U, this is an HD remaster touched up in XC2's engine). Ys VIII, Dragon Quest XI S, Trials of Mana remake, Tales of Vesperia, and Final Fantasy X/X-2 HD are great too (some are ports of older titles, but none were on Wii U). Oh, and I hear good things about Fire Emblem: Three Houses of course. Oh, I liked Dragon Quest Builders too, & I hear the second one is even better (both are on Switch).
Otherwise Astral Chain (action), Luigi's Mansion 3 (adventure), Link's Awakening remake (adventure), Smash Ultimate (fighting) are all top tier, and I had some decent fun with Daemon X Machina (action) as well. If you're a fan of the series, Dragon Ball FighterZ (fighting) is a great port, too.
There's just so many great titles on Switch.

ARMS is one of my favorite games on Switch. Very unique 3D arena brawler where the characters all have extendable arms. You have to jump dodge around almost more like a shooter than a fighter. Kinda feels like a Dreamcast game, being a weird but fun arcade-like experience.
It's a bit light on content, but perfect for quick play sessions.
