@TochTendo99 That hypertext link works when I click it. Well, in that case, I'll copy and paste what's on the page. I can't guarantee it will solve your issue, but in the past, it's been the solution for most in the forum struggling with Fortnite's voice chat on the Switch.
(Since there have been 4 threads created, and other people with this issue, I decided to make a thread with the solution.)
If you can't turn voice chat on in Fortnite, the solution is likely Switch Parental Controls. Parental controls, by default, are in the Switch console settings (the gear icon on Switch's home screen). If you setup the app for the Switch Parental Controls app, then you must use the app.
In Switch Parental Controls, under "Restriction Level", "Communication With Others" must be set to "Not Restricted" for voice chat to work on Fortnite. Otherwise, Fortnite settings will not let you turn voice chat "On".
Notes for App:
***After you toggle the App setting, YOU MUST TAP THE ORANGE CHECK MARK on the screen to apply the setting change.
(*** If the switch console is on & connected to the internet, changes in the Parental Control app settings will be applied to the Switch instantaneously. If you change the settings in the App while the Switch is off, you may have to go into the Switch settings (the gear icon on the Switch home screen), go to Parental Controls, and hit "sync with app" for the new settings to be applied.)
Other set up details. I used the headphones w/ mic that I got with my smartphone - headphones are plugged into the Switch headphone jack. I know Fortnite voice chat on the Switch is at least supposed to work with the headphones w/ microphone that you get with smartphones.
EDIT: 12-29-2020 Fornite update changed the settings menu. If voice chat says "Disabled", here's the new menu. Open SETTINGS, select AUDIO, and "VOICE CHAT on/off" is in there.
Have you tried other games because it could be your headphones.

"Can you use wireless headphones with mic on Switch?
The Switch will only allow one Bluetooth audio device to be paired at a time, but you can have up to 10 devices saved to the console. Since Nintendo has a mobile app that handles all chat capabilities, Bluetooth audio will also not work with local wireless multiplayer, and Bluetooth microphones are not supported"

I'm just another nintendolife liker. If you know another solution, by all means share.
I see some things for third party adapters for wireless/bluetooth voicechat, but I never see people talking about those. And I'm surprised by the lack of professional/official looking youtubes for that market. So, I can see why you've had trouble.
@TochTendo99 I have the same problem with my wireless earbuds. I tried to use for chat on Fortnite because it's more comfortable, but the mic didn't work. But at first I was using a USB headphone and this option work perfectly on Fortnite, I don't like headphones and that why I was trying my wireless earbuds, but it seems that USB is the only option for this problem.
So there is a way to get the mic to work… but you have to buy the dongle (Cygnett - Wireless Audio Adapter for Nintendo Switch) this allows any wireless headset to work with mic this works while docked or hand held with the adapter!
@Bu88les96 Correct me if I'm wrong, anyone. I think when nintendo added bluetooth support for headphones, it didn't support microphones (audio input). When they added the feature, they said they added "bluetooth audio support" - which, that statement seems to purposely avoid saying "voice chat". It's my understanding that you'd need to by a third party adapter for wireless mic support.
Nintendo didn't want voice chat to be easy to access for a family friendly console. It's not a popular move, but that was their logic.
@Bu88les96 My son has the same problem with his new Razor Barracuda X headset. We have tried everything and the mic doesn't work for Fortnite. What are we looking for if I want to purchase a 3rd party adapter to allow voice chat on Fortnite. Thanks
