Just bought myself a Switch Lite. My 2 sons each have the Nintendo Switches (not lites) and I'm wondering if I buy a game, is there a way they can play that game on their devices, under their profiles. If that's possible, will their progress on the game override mine and vice versa?

Every game saves its data to the internal memory of your console (or cloud if the game has that feature enabled). Every profile has its own saves that do not interfere with other profiles saves (doesn't matter if they're on the same Switch or not). There are only a few games that share their save file with every other account on the same Switch (Animal Crossing: New Horizons).
If you give a game to someone else, he/she will create a new save file on his/her profile on his/her Switch.

So if I buy Smash Bros, can I share it with my family? Or we would have to purchase 2 separate games?

Only if you buy the physical retail (cartridge) version.
One physical game can be used on infinite consoles.
