Been incredibly busy and suffering vision issues, so I have done limited play for the past 3 months. I did the last update 1.2.0 I think, I can barely see the numbers).
Since then I have been unable to connect my game controllers.
Going to buy a new OEM Pro controller and see if that will pair. Only my OEM Joy-Cons work... sigh
@BizGal If your controller won't sync, plug it in with the usb c cable. It should sync then. If that doesn't do it, make sure controllers are updated. They need to be plugged in to receive update. Open Switch settings from home screen/controllers/update controllers.

As far as I've seen, there hasn't been any issue with controllers since that recent Switch OS update, but sometimes stuff happens
@BizGal Side note, the Switch has a zoom function, in case text is too small to read.
Double tap Home button to turn zoom on. Use X or Y to zoom in or out.
Use left stick to move screen. (you'll see a button guide on screen when zoom is turned on)
@WoomyNNYes Thank you for your information. I have went through the gamut. I am thinking it is my console. Thinking of getting new Joy Cons and a new Pro controller as my grandnieces/nephews have destroyed two of them and a set of Joy cons in less than a year as they keep appropriating them for their own use.
@BizGal So, with the switch on, you plugged the controllers into the dock via usb c cable, and still couldn't get them to pair? That will be the first I've heard of that issue. Not saying it's impossible.
If the controller's batteries are drained, maybe that could cause your issue. If the batteries were drained far, they probably need 30 min of charging before they'll function again. (that's how many rechargable things are, including the switch console. If the battery is drained all the way down, it won't function again until you charge it for 30+ minutes.) If you knew that already, you can disregard. Just trying to rule things out
So I found the fix. When I have some time I will link to the resource I used.
But basically after the last update 12.0 , 3rd party controllers were not pairing.
Yesterday I went to my other place and started the Switch I keep there and it updated.
BOOM! The exact same issue after the update, confirming that it was not my Switch but an update bug.
The fix is SETTNGS > Controllers > Unpair controllers, and unpair all of the controllers by pressing X.
I was able to pair my 3rd party controllers wirelessly after that.

I found the fix, it was an update bug that affected 3rd party controllers only.
If I was using my OEM controllers I would have never noticed.
Posted the fix below.
I had some issues pairing one of my 3rd party controllers to my brothers switch after the update, though in our case it worked after a quick switch restart.
