It depends on how you define the behaviour of Pinocchio's nose. If you take it that it only grows when Pinocchio knowingly lies, then yes, what you say is correct.
Alternatively you could assume that there is some omniscient being/force/something else that knows what is true and what is not. Then, no matter what Pinocchio thinks, his nose will grow whenever he says something that is factually incorrect.
In fact that wouldn't be a bad power to have if it's the latter. You could make a lot of money by exploiting that omniscient power for information (assuming that the omniscience extends to the future) - Pinocchio could sit there and run through the lotto numbers, saying '7 will be drawn in this week's lotto'. If his nose doesn't grow, then just jot down 7 and keep running through the numbers. That way you, without fail, can predict each week's lotto numbers.

Well. going back to the pinocchio thing... He said a lie, his nose is not going to grow just because he says so.
But since it is a lie it does grow 1 stage (based on the disney cartoon, it seems to work by preset increments).
Just because it is true after that it doesn't mean it wasn't a lie before.
Just like the linear programming code Zez wrote about it.
Now, assuming he needs to say the truth about his lie to lower his nose size, then the real paradoxical question would be... What would he need to say to tell the truth?
