I’ve never tried real wasabi, though I would like to. The stuff they throw in at local sushi joints are usually a heavily processed combination of horseradish and mustard with green colourant and is said not to taste anything at all like real wasabi. And while I generally like mustard, the flavour does not complement sushi at all, and I always throw it out. I never use the soy sauce either.

I’ll only say wasabi as I suspect that the real thing would be a lot nicer than horseradish sauce.
