Although if we start talking about video game composers my mind defaults to Hitoshi Sakimoto, Yuzo Koshiro, Yasunori Mitsuda, Daisuke Ishiwatari, Akira Yamaoka, Nobuo Uematsu, etc.

My vote goes to Hirokazu Ando and Jun Ishikawa, the most notable Kirby composers that have reliably made great music for the series (though with huge gaps between Ishikawa's contributions IIRC) for decades.

Also I posted Pipe House from Super Mario RPG and its been removed already lol.

Yes, I love Yoko Shimomura's music. She even composed some of the music for one of my favorite games of the past few years, Mario + Rabbids Sparks of Hope. The song below is from her.
