The strategy, the battling, the collecting, the adventure, the characters, the cuteness of Pokemon, the music, the competitive aspects, etc. There are tongs of reasons for people to enjoy the series.
People keep saying the Xbox One doesn't have Backwards Compatibility.
I don't think they know what Backwards Compatibility means...
Mainly because it does something that most other games dont- mix pretty simple RPG elements with more complicated aspects, espcially in online. what I personlly like about pokemon is that it can be easy to pass through as well as difficult if you really want to learn the mechanics deeply. you can play it whatever way you like, and each time you can also try different kinds of pokemon, items and moves. its very verstile
A lot of people around my age in their early 20's have an emotional connection to the series due to the mass amount of marketing and hype in the late 90's. Personally I just enjoyed it for the social aspect up until gen 4, then I got super into the competitive side of the series
I enjoy Pokemon but I'm not as invested in it as I used to be. I have Pokemon Y and gave up on it months ago, but I did almost complete it. My issue is, there are WAY too many species of Pokemon now, and many of them are bizarre and too weak to stand a chance in real battles.
I have a bigger connection to the Super Mario games than Pokemon but I can definitely understand why people still love it. It has a timeless feel to it and I don't think it will ever go away.
It seems very formuliac at the surface, and it is, but it also gets deeper and more complex as the series goes on. At the same time it never sacrifices its easy to pick up and play nature. That's why you can play it just the way you like. That makes it enduringly fun. It's a relaxing yet deep game.
I've wondered that too. I had a poke game on GBC and got stuck sold it and never played another one since! Each to their own, I think. That said I would like to track down a copy of Pokemansnap on n64.
It was one of the best JRPG's that became a phenomenal hit. The concept of real animals being in the same world as you that weren't all the same, as they had powers and abilities and you could catch them and use them for strategic battle and go on a fantasy adventure that is quite closely based off our time. Pokemon is most known for cute and powerful monsters, self engaging adventures and stories, and lore.

The game holds an emotional connection to many kids who grew up in the mid 90's/early 2000's including myself. Pokemon is just easy to pick up and play. The whole collect, train, and turn based battle make the game addicting. On a personal note despite my nostalgia for the older games in the series, my interest in Pokemon has greatly died down. It's mainly due to the fact that I enjoy other RPG games over Pokemon and the games don't change all that much.

Tbh I can see OP's view (apart from not liking one of the games but then bought the next 2 for some reason) as the story/main part of the game of collecting badges, beating the elite 4 etc hasn't been of top quality adventuring for a few gens now which for newcomers can be a bit meh if they see that as the bulk of the game whilst regulars find the meat of the game like building a competive team, filling up the 'dex etc after you've become the champ.
