@Chatham: The Godfather and RE4 both were pretty amazing. We need a Wii-based GTA. Strangling people with my Wiimote/Nunchuck in The Godfather was WAY too fun! (And stress relieving after work!)
I love the Godfather. Such a fun gmae. Always great fun to just beat the crap outta somone with a golf club after a stressful day I also own the GCN RE4 ... I beat it 14 times XD
@Wiiperson: I know this is surprising but I loved Sonic & The Black Knight. Collecting weapons, items a bunch of missions, for me it felt almost like an RPG because of those upgradings you could do not just on Sonic but also on Lancelot (Shadow), Gawain(Knuckles) and Percival(Blaze). In my opinion definetely worth the buy!
I also loved SatBK. I can't see why it got such low scores. I love the different swords for Shadow Knuckles and Blaze. I hate playing as blaze though. I don't know why.
Most of you are saying Galaxy. Though I agree it was unique and the graphics were quite amazing, I didn't like the game all that much. I tried playing through it as Luigi a few weeks ago and just couldn't bring myself to do it. The whole time I was playing I felt bored. It is by no means bad, it just isn't as amazing as everyone else seems to think.
My favorite would have to be MadWorld, as of right now. I'll get back to you after the conduit is released, as it might take #1.
My favorite is still Resident Evil 4. It was a superb update on an already stellar game. It may be dethroned though once the Metroid Prime Trilogy is released, if the controls in 1 and 2 work just as well as they did for part 3.
The runner-up spot definitely goes to Super Mario Galaxy. It may be extremely linear and a bit easy, but it's still a blast to play. Speaking of which, I really should get back to playing through it with Luigi.
Honorable mentions: Rock Band 2 is a great game for zoning out. A good stress-reliever after a long day at work. Not much thought required. The other title would be Geometry Wars: Galaxies. There are some quite devious levels in this pretty retro shooter. Plenty of replayability, while also not being that taxing on your mind.

My favorite Wii game is Super Mario Galaxy. So very nearly captures the magic of Super Mario World in 3D, which is amazing, because I don't like 3D platformers as much as their flater counterparts. It's just a joy to play.
