Diddy Kong Racing and Sonic R wouldn't be possible for different reasons. I don't know what Sonic Championship is? Unless you mean Sonic The Fighters? And we would need Super Bomberman 1 - 5 on the VC not just the first game.
Sonic Championship = Sonic the Fighters Yeah, I guess we'd have to wait for Virtual Console 2.0 before we get Saturn games. Diddy Kong Racing could at least be altered (maybe throw in Tiny and Dixie instead) Whoops! Forgot Star Fox. The NES version of Wario's Woods is already available.

All they need to do is change the graphics of Banjo and Conker to another character entirely, they don't need to touch how each character controls. It wouldn't be Dixie and Tiny though since Banjo is a heavy-weight and Conker is a medium weight. Replace Banjo with Donkey Kong and Conker with Cranky Kong. I wouldn't mind paying 1100 or 1200 points for an altered Diddy Kong Racing if they had to charge extra because of the work they had to do on it to get it released.

They won't translate Seiken Densetsu 3 and its unplayable if you don't know Japanese. Also, I wouldn't count GB games either since the system is not supported.

@SKTTR - what about Ys V: Kefin, The Lost City of Sand on the SFC? It looks very interesting. Although from the one gameplay footage I've seen of it, it looks like it borrowed some gameplay elements from Brain Lord.

Wouldn't it have been released by now though? Typically NA and EU VC titles are released around the same time and it's been nearly 2 years since it was released here in NA. I do hope I'm wrong though. It's a great game that you guys should definitely get.

Yes, the arcade versions are better than their home console counterparts. Wonder Boy (SMS) and Wonder Boy (Arcade) aren't much different - of course the Arcade has smoother scrolling, no flickering and more colors, but the SMS port is very faithful and good. The Arcade version of Wonder Boy in Monster Land has a weird border, but once you get used to it, the game is better than the glitchy SMS version. And Wonder Boy III: Monster Lair's arcade version has more stages. The Mega Drive version is actually shortened to fit the cartridge limit. If you want better versions of these games maybe you should wait until the arcade versions will be released.
The other two Wonder Boy games "Wonder Boy III: The Dragon's Trap" and "Wonder Boy in Monster World" are console exclusive and weren't released in the arcade. Personally they are my favourite Wonder Boy games. There are Turbografx/CD ports on the VC that came without SEGA's Wonder Boy IP (called "Dragon's Curse" and "The Dynastic Hero") but I just like the originals, the Wonder Boy's more. They original Wonder Boy games have better music composition (imo) but are the same in every other regard except Dragon's Curse is 600pts and Wonder Boy III: The Dragon's Trap is only 500pts.
For the record there's also a NES clone of Wonder Boy 1 on the VC called "Adventure Island" but that game is ugly and crap compared to the original Wonder Boy. There's also a TGCD clone of Wonder Boy III:Monster Lair called just "Monster Lair" which has all the stages from the arcade but worse graphics than the arcade and Mega Drive versions.
There was also a game called "SUPER WONDER BOY" in the arcade, but I don't exactly know what's the difference between this game and the normal WONDER BOY 1.
It's really a shame for Super Turrican 2 not being released in the EU shop. It's one of the best run&gun games on the SNES.
