OK sorry but I'm sure there have been so many questions on this because Nintendo has a myriad of accounts, profiles, user ID's and so on. I tried looking this up but i haven't found anything for my case.
My situation:
I have one Nintendo switch
I have one Nintendo account (parent) where i have bought games and so on
my kids (aged 7, 8 and 10) and my wife have profiles on the switch only
My needs:
an account that allows my youngest child to play Minecraft online among other games i'm sure
my other kids do play Minecraft as well and sometimes all three play together on one screen
Questions:
1. Can i buy just the individual membership for my account but then my kids play online under their own profiles?
2. Will my kids be able to play Minecraft online together on the one Switch console OR do they need their own profiles on Minecraft AND THEREFORE need their own Nintendo Accounts as well AND THEREFORE i need to buy the family plan to be able to make this happen?
Any help and suggestions would be greatly appreciated.

No, only the profile tied to the Nintendo Account with the online subscription would be able to play online. An family subscription is the way to go if you want all of your kids to be able to play online from their own profiles.
@LO044 Many online games with progression systems allow only one online account per nintendo account. In order to have two Splatoon 2 online accounts, I had to buy the Nintendo Switch Online family plan (because buying the family plan is cheaper than buying two individual NSO subscriptions). The NSO family plan allows up to 8 accounts. And each Nintendo Switch Online/online game account requires a unique email.
So, for Splatoon 2, I had to use a second email address to make another Nintendo account on Nintendo's website, then link that to the user on the Switch (each user on the Switch get it's own Mii/Nintendo character icon).
I don't know know if Minecraft has split screen multiplayer for online.

If you go the phone route, it's pretty easy to get a real person on the phone, which is rare these days.
