Yes you can alot depends on how big your screen is to see everything. For 12 players you probably want something on the 50" or bigger with that many plays the screen will fill up fast as well as expect some lag as that might happen with any games having that many players. But I think the Switch can control up to 8 controllers on one unit that is the max unless they updated it to handle more.
@Theatre you can it allows for up to 8 player per Switch unit so that is the most you can do for one unit. Otherwise they will have their own screen with 8 players on their side and I think you can do a local Lan to allow more but not sure since I haven't done this. What I would say is to contact Nintendo Support and tell them what your setup is and see what else they give for configuration setup for 12 players. If the Projector has a HDMI connection then part of the setup is there already.
I too wouldn't mind if the didn't limit it to 8 players per Switch that would make it just go wild in game play. But if they do update the system and allow more players then 8 that would be fantastic. For me it would be something to see 12 players on one system on youtube playing just to see the chaos of game playing.
