So when i wake up my Nintendo Switch after a couple of hours in sleep mode the fan turns on at a kind of high speed (no grinding noise at all) and after like 30 secinds it decreases to normal speed. Is this normal? Is it supposed to do that?
@StoJ92 Yeah, when you turn on the Swtich/boot up a game, the fan can do a turbo mode that makes enough noise to stand out, and make people wonder, "is something wrong?". It seems to be normal.
My switch does too. Most electronics do. From being in use for too long, or having had the device for years. My old laptop does constantly, but it almost never interferes with what I intend to do on it.
Depends on the environment your Switch is located in. Dusty areas you should have a cover protecting the system from dust or use a vacuum to vacuum the dust if there any out of the vents. But if that becomes the norm of sounds then you should contact Nintendo support about it.
@StoJ92 Absolutely nothing to worry about. Mine does that when I switch from docked mode to handheld on very heavy games like Zelda BotW, Diablo 3 and The Witcher 3.

No one disputes when running such intensive games as those mention but what is at play is when powered on and the fan issue is heard they need to diagnosis if this is in fact a hardware or just dusty environment where the fan has to work harder to cool the system.
