Ok so the time has come that I need to get a bigger SD card for my Switch, before I do that I just have some questions. Which one to get and most importantly when I get the new one do I just pop it into my Switch and that's it. Do I have to move files around from the old one to the new one and if so how??

@Tasuki I just upgraded to a 256 card a couple of weeks ago. I had a few problems though. All the online guides say use a PC to make a back up, then format your new card and copy the Nintendo folder across. But my switch kept saying the new card was formatted to another switch.
In the end I moved as much to the switch as I could (pictures etc) and then reformatted the new card and downloaded the games again.
Hopefully you have better luck than me, but all your save data is always on the switch so you won't lose that. It was a poor process, but done for a while now.
I use two cards because I like having all my games instead of using the archive feature. One is 512gb and the other 400gb. I use the 400gb for the games I play the least. When you first get the card all you have to do is power off your Switch and pop it in.
There is likely a less time consuming way to do this but to transfer games from one card to the other I archive the game from my 512gb card, power off my Switch, pop the 400gb card in and then re-download it.
@Tasuki if you search for forum titles for "new switch" you'll find a page with a REALLY long title but it has lots of Nintendo directions for common Switch set scenarios.
