So, now I have Super Smash Bros Ultimate, Splatoon 2, and The Legend of Zelda: Breath of the Wild (Which I am still playing, I’m not even in 1/4 of this game I think, and I am not in a rush).
What should I go for next? I was thinking Mario Kart 8 Deluxe, or Super Mario Odyssey, but now Super Mario Maker 2 came out and looks amazing too!
Mario Kart 8 Deluxe - I am into racing but even though I will eventually get this game if not now then some day, I am afraid that I will get bored fast with, you know, IT’S STILL RACING ALL THE TIME.
Super Mario Maker 2 - It looks fun and you can play different (but kinda the same) games all the time, with levels made by gAmErS, but I am afraid that after a while the building will get boring and Well, that is what the Game is about!
Super Mario Odyssey - I am sure I will get it but just ... I am playing Zelda right now and I want to focus on it and I don’t know if it’s a good idea to get the SHOULD I PLAY MARIO OR ZELDA RIGHT NOW? And then playing one of them too much and forgetting what I was doing in the other one.

Depend on your priority.
There are some games you can play for several minutes, other take a lot of time to finish and you cannot do quick save oftenly.
Maybe finish Breath of the Wild first, then move onto Super Mario Odyssey. Odyssey is a fantastic game.
I'd also recommend Super Mario Maker 2. When you get bored of making levels you can just focus on playing other people's levels instead. Personally I'd start with Odyssey.
Personally, I like to rotate genres with every new game I play. I'm an rpg fan first and foremost, but it can't be the only genre I play otherwise I experience burnout. My recommendation? Play a game rated 8/10 or better in a genre you'd normally wouldn't give a second look at.

Sounds like you need something fairly light on the side, as to not distract too much from Zelda.
I would consider a 2D platformer. Mario Maker is great, even if you don't plan to make your own levels - the story mode and user created content have a wealth of creative ideas that will keep you busy. Outside of SMM2, I personally find Donkey Kong Country Tropical Freeze to be the best 2D platformer on Switch,also recommending Mutant Mudds, Rayman Legends, Sonic Mania, and Yoshi's Crafted World. Crash Bandicoot is also good and, while not a 2D platformer, retains a lot of the design philosophy from these games.
Mario Kart is a good game but, assuming you're after a single player experience, you'll only get so much out of it.
If you want something completely different, I would also suggest Mario and Rabbids.
All three of the games you mentioned are great picks.
I would recommend Mario Kart 8 Deluxe if you have friends/family to play it with and/or you're gonna be playing it online. It's best played as a multiplayer game, locally or online. In case you want a break from racing, there's a battle mode with eight arenas and five different battle games. Out of all the Nintendo online games, this one's still my favorite.
Super Mario Odyssey is excellent (my favorite Switch game overall!), but yeah you might want to focus on at least putting a lot of time into Breath of the Wild first. Both BotW and SMO are massive games with plenty to do.
I'm having a great time with Super Mario Maker 2, as well. You can still play through the story mode or playing other peoples' levels in case you get bored of making your own levels, and a lot of user-made levels are good stuff. Like @Buizel said, there's a lot of other 2D platformers on the Switch you can try out, as well. Sonic Mania is one of my favorite games, too!
I would recommend Super Mario Maker 2 based on your needs, that game can be played in quick bursts. You will need to have NSO to play other peoples' levels though - that's why the bundle with 12 months of the online exists.
I think you should go for your suggested Mario Kart. Looks like you have a gap in teh racing games department and you cant beat it for quick pick up and play racer. Loads of content to get through and real easy to jump online and race.
@Osk6r There is no lack of great games to pick from on Switch at this point. Mario Maker 2's big selling point is the building, but the story mode is also a really great 2D Mario game and you have essentially infinite levels to play made by other people. A person could spend hundreds of hours and never make a single level.
If you're looking for a fabulous story experience on Switch Xenoblade Chronicles 2 and it's expansion Torna: The Golden Country are both great! Octopath Traveller is pretty cool too.
Of course you can't go wrong with Mario Odyssey either.
Fire Emblem Three Houses is coming later this month and promises huge bang for your buck with 3 full campaigns right out of the box and a huge level of customization options, and modes for different skill level players.
Of course you should absolutely finish BotW because it's one of the best games on the Switch and probably one of the best games made by Nintendo this decade.
