This has been very helpful and entertaining, expanding my Switch's Library and trying out some of these games 🙂. Please, if you've got more suggestions as well, keep'em coming. I'd love to keep trying out other games.
A co-worker had also recommended some more JRPGs, since I had been attempting to learn Japanese on an app called Busuu. Thinking about starting off with Crystal Chronicles for NSW, whenever I wrap up some of the other games.
I've just got such a bad habit of leaving games unfinished. Still haven't even officially crossed the finish line with BOTW to this very day. Whenever I do make time, I just get easily sidetracked with all the side quests and other objectives; trying to complete every little thing I can, so I can try and unlock any potential secrets or Easter Eggs. And I end up setting one game aside for a while, so I can use that time for something new or different.

@cordova94 Yeah I agree on ACNH. It's the Switch game that I've put the most time into. That game really knows how to keep me busy when I start it, lol!
And yeah there's no shortage on Mario platformers, and I have all of them in some form. Super Mario World has always been one of my all-time favorites, but I love many of the modern games too!
I'll also add a good number of Zelda games to my list. A Link to the Past, Link's Awakening, Wind Waker, A Link Between Worlds, and Breath of the Wild are pretty much my favorite ones.
It's hard to say that what distracts me (or anyone else for that matter) might work for you, particularly because our personality is different with each person, therefore we find different ways to relax and distract ourselves. For example, before my 3DS SMT binge, I remember distracting myself with a lot of Uno online and Pokémon Trading Card Game Online. They were straightforward games that didn't require much thought, so it helped me kill some time and relaxed rather than have any serious mental input. They were games that helped me go through the motion.
Most other video games don't work for me because I only usually buy video games nowadays if it offers me a good story and journey, which means that if I do play them, I would need to think and ponder, which isn't a very good way for me to relax my brain and not think so hard.
I remember though that when I was a kid, I used to play Pinball on Windows PC a lot. Very easy game to lose yourself in for hours.
Puzzle games and Action Adventures games, with or without story if the game-play is there I'm happy. Relaxing sim games too like AC:NH (my #1 all time favourite game) I find really fun and help me relax.
@Nahr_Alma Maybe you should try some shorter games instead if you tend to leave them unfinished. Personally, i played a lot of Furi and Katana Zero which are Indie games that can be finished quite quickly, but take a bit longer to master if you enjoy them a lot. The first is a fast paced action boss rush game and the second a kind of fast paced puzzle sidescroller? Anyways, they kept me busy for quite a long time and i don't usually dwell on games. I am more the bullet hell style gamer, though
