Here's my list, I hope you don't mind but I threw the one's you said to exclude in anyways since I don't see why not. I put a little explanation besides each game as to why I thought it should be placed there.

SSS Tier (Literally why did you buy the switch if you don't have these games)
The Legend of Zelda: Breath of the Wild (One of the best games of all time and in my opinion the best Zelda game of all time)
Super Mario Odyssey (As good if not better than Super Mario Galaxy 1+2)
Super Smash Bros. Ultimate (The definitive version of Smash Bros)

S Tier (Some of the best games on the system)
Splatoon 2 (Singpleplayer, online co-op, online competitive. That's three modes with countless hours you can spend in this amazing game. Definitely holds up against other modern day FPS games)
Xenoblade Chronicles 2 (A lot of people would probably rank this lower and I wouldn't blame them, but this game was my first JRPG and it is a ton of fun. It can be really grindy at times but the amount of enemy variation and cool bosses is just amazing. The story is one of my favorites as well, although I would recommend using the Japanese voices if you don't like the English voice actors)
Octopath Traveler (One of my favorite RPGs of all time, it brings me back to older games like Final Fantasy VI. Beautiful art style and great turn based combat, a true gem of a game)
Super Mario Maker 2 (The story mode is great, level building is great, and there's literally infinite replay value with all the levels online. Just a fair warning there's literally no point in getting this without the online service so just saying)
Fire Emblem: Three Houses (Maybe I just like RPGs since this is the third RPG in the S tier but this game definitely deserves it as well. Amazing story, amazing gameplay, and tons of playtime, I would recommend to anyone who is on the fence about buying it)
Astral Chain (From the same people who made Bayonetta, Astral Chain is just a masterpiece of a game. Everything about it is just amazing and it's surprising how good it looks for being on the switch)
Luigi's Mansion 3 (This game is AMAZING, it takes what made the other Luigi's Mansion games good and makes it many times better. It even has online multiplayer modes and couch co-op, how cool is that!?)
Pokemon Sword + Pokemon Shield (Okay so like hear me out. These games are actually really, really good. People complain "Oh it's buggy, looks bad, way too short, way too easy, and cut half the pokemon." I don't have a problem with any of this. I haven't encountered any bugs, and for the most part the game looks beautiful, better than any of the other pokemon games at least. If you actually take your time to enjoy the game rather than rush through it you will get plenty of hours out of it. Yeah the game is pretty easy but for me this has never been a problem as I like to overlevel my pokemon anyways so I just have fun playing the game. The pokedex cut in my opinion is actually a good thing! I don't own every pokemon game before this so now I can actually fill out the entire pokedex! And with the expansion pass coming out there will be even more fun stuff to do! This game is great!)
Cadence of Hyrule: Crypt of the NecroDancer feat. The Legend of Zelda (Literally this is such a good game, I loved the original Crypt game and this just makes it a hundred times better, go buy it right now)

A Tier (Very good games)
Mario + Rabbids: Kingdom Battles (This game is way better than it should have been. It plays like an x-com game with grid turn based combat. Definitely worth picking up. On a side note it usually goes on sale even down to 15 dollars so wait til then)
Mario Kart 8 Deluxe (I would say this is the best Mario Kart game, at least content wise. Plenty of fun to be had here)
Snipperclips Plus (This game is so cute and such a fun time when played co-op, although you probably don't want to play this by yourself)
Bayonetta 1+2 (Both amazing beat-em-up games, kind of like Devil May Cry in my opinion)
Donkey Kong Country: Tropical Freeze (A very good game, it could even be said it is the best Donkey Kong game. I really liked it but 50 dollars for it is just too much since it's a port without much new content)
Mario Tennis Aces (In my opinion this is the best Mario Tennis game but 60 dollars is still too much for it. The singleplayer mode is pretty good and the game mechanics are great, just make sure to get it on Black Friday or something)
Super Mario Party ( My favorite Mario Party just because it has a ton of different modes and a lot of minigames, and NO STUPID CAR. The only thing I wished that was better was that the boards were more interesting and that there were more of them. And also if the online was better too)
The World Ends With You: Final Remix (I'm basing this solely on a friend's opinion as I've never actually played the game but from what he says it's a really good game so yeah)
Pokemon Let's Go Pikachu + Pokemon Let's Go Eevee (Both of these games are really good, a very accurate representation of the original red/blue/yellow games. They are geared a bit more to newcomers so some mechanics are different and it's definitely way easier than other Pokemon Games)
New Super Mario Bros. U Deluxe (A lot of people hate on this game just because it's a port and Mario Maker 2 is a lot better and whatnot, but it really is a good game! Tons and tons of levels especially with New Super Luigi U included with it and all the challenges you can do as well)
Yoshi's Crafted World (I never hear this game being talked about at all but it really is a fun time, it kind of is a short game and is pretty easy sort of like Kirby Star Allies, but the visuals are amazing and the levels are definitely a lot more intuitive)
Dragon Quest Builders 2 (Mostly fixes everything that I didn't like in the original and also added multiplayer which was epic)
Tetris 99 (This game is free for anyone who has the online service. It's literally a Tetris battle royale and it's such a fun pickup and play kind of game. And that soundtrack is absolutely BANGING)
The Legend of Zelda: Link's Awakening (Okay so this game is a masterpiece, almost as good as Link to the Past. Why isn't it S tier than you may ask? Because I think it's highway robbery for it to be priced at 60 dollars when the main game is only going to last you 10, maybe 20 hours tops if you collect everything. It's a Game Boy remaster and it's just stupid that this game is priced exactly the same as Breath of the Wild which I have over 120 hours on. Again great game, not worth the price)
Dragon Quest XI S: Echoes of an Elusive Age (I love this game, it's a huge game and there's so much stuff to do in it, definitely would recommend)
Tokyo Mirage Sessions ♯FE Encore (I haven't finished this game yet but it's really fun. Be warned it plays like Persona, not Fire Emblem. So make sure to take that into consideration when buying)

B Tier (Good games)
Pokken Tournament DX (It has more content than ARMS but still not worth 60 bucks. Definitely would recommend for people into fighters if you can find on sale).
ARMS (Not worth the price you have to pay for it but it is a good fighting game nonetheless. The motion controls are a really cool idea that works surprisingly well imo)
Fire Emblem Warriors (I don't know enough about this game as I've only played it a few times at a friends house but from what I've played it seems like a pretty good game).
Hyrule Warriors: Definitive Edition (I haven't really played this one either but again it looks pretty good
Dragon Quest Builders (I really wanted to like this game but my problem with it was that it tried to give you linear questlines in a non-linear sandbox game. This made it hard to be creative and thus made it a bit boring. I only finished the first chapter so looking at it objectively it could probably be an A tier but for me it's a B)
Kirby Star Allies (Yes it didn't have much content in it, but with constant updates and an entire new mode I think that this games deserves a second chance. The story mode is only a few hours long but the other modes will offer you a lot more fun if you try them)
Sushi Striker: The Way of the Sushido (I only played this once and it seems pretty decent, not amazing but still pretty decent)|
Captain Toad: Treasure Tracker (Quite the gem of a game, it's a cute little puzzle platformer similar to Super Mario Galaxy although definitely not the same. It is a lot of fun though)
Fitness Boxing (It's kind of like a spiritual successor to Wii Fit so if you liked that you will probably like this)
Marvel Ultimate Alliance 3: The Black Order (The combat is kinda mediocre but the it's worth your time just because of the massive amount of characters you play as and fight against)
Daemon X Machina (I haven't picked this one up but from both of the demos that I played and from what I've heard it's a decent mech game. Not much more than that but it is what it is)
RingFit Adventure (This game exists I guess? Asking price is way to high for me to try it out but it seems like it's only for a certain niche that like weird games like this. From what I've heard it's pretty good so I'll just rank it here)
BOXBOY! + BOXGIRL! (Very cute game, pretty short but still a lot of fun)
Super Kirby Clash (This game is free, so that great. It's somehow a combination of Monster Hunter and Kirby games so that's really cool. It is kinda repetitive and grindy at times, but the game never feels pay to win and it features some of my favorite bosses from across the kirby games which is awesome. The only thing I really didn't like with it was that the online kind of sucks, it can be really, really laggy at times, but maybe that's just me)

C Tier (Okay games, might have been good but have some problems)
Nintendo Labo kits 1-4 (The Nintendo Labo kits 1-3 are kind of a try this once and you're done with it thing. And they are pretty fun when you are actually building them and using them, but again not much replay with them. It's only for a small niche of people so I wouldn't recommend unless that's really your thing. Labo kit 4 on the other hand is a VR kit that let's you do minigames and even some of their first party games in VR. Some of these games are better than others but it does actually have some replay to it and does get updated support every now and then. If you really want to see how a Smash Bros fight looks in VR get it but if not it's kinda meh)

D Tier (Not that great)
1-2 Switch (Could have been good but seems more like a tech demo than an actual game, not that much replay value at all. The only saving grace is that the minigames are actually a bit of fun and intuitive at times but not something you would want to play over and over again, and definitely not worth 50 bucks)

F Tier (Garbage)
(Apparently there aren't any nintendo games that are this bad and I'm not really surprised since nintendo never puts out straight garbage)

After reading your lists I got two thoughts…

1 - Got to get and play Astral Chain
2 - Some people are really upset with some things being out-of-the-box in BOtW!!! But for me is a Wii-U game not a Switch exclusive.

S+ (the absolute creams of the crop, it's a crime not to have at least 1 or 2 from here, a 5/5)

S (incredibly good games, must have them or at least try them, 4.5/5)

C (ok games, enjoyable sometimes but there are things that hold them back from being really good, 3/5)
-Fortnite? (Put it in because I have the game, and I want to include every game I have)
-FIFA 18 / FIFA 19 / FIFA 20 (same case as Fortnite)

D (meh games, they aren't as enjoyable and are categorized as mediocre, <2.5/5)
-1/2 Switch (this game needed to come with the console, it's worth 5 to 10 bucks, 60 for such a limited experience is too much, can have fun sometimes but no way it's higher with its price)

There are no F games I've played for the Switch.

Also just finished Paper Mario: The Origami King. An S tier for sure. Loved it. If the battle system was a little more polished and coins were more exclusive to battling, it would be in the top tier.

I agree with Arms, it's one of my favourite Switch games.

It manages to do what a lot of new fighting games struggle with and establish an original roster of fighters straight away, I find the fights are accessible and deep and I really like it's style, some of the music I could quite easily see being used during a FIFA World Cup as it has a sports feel whilst keep it colourful. It stands above most arena fighters I have played, I also like that it's an original arena fighter and not another anime based on.

S Tier - The Essentials. Every Switch owner should have these unless it's a genre they simply don't like. Intentionally kept small with a lack of redundancy (when BOTW 2 comes out, either that or the original is in here, not both):

I bought on March 2020, played only a few hours then neglected the game for more than 3 years.

ARMS is my favorite Switch game currently, but Xenoblade Chronicles overall is the best game on the list (it's just not as well done as a Switch release). Paper Mario: The Origami King may slip into S tier for me, I don't know yet. In spite of my preferences that I have for the series from the first two games, I'm having a very good time with the game.

@Krull I should've put it like that. Too many categories 😅. But yeah, Paper Mario: Origami King is a must buy. I've played all of the Paper Mario's since Super Paper Mario and this one is my favorite without a doubt.
