I know this info can be found elsewhere, but what are the largest compatible SD cards the Switch can use? My memory is going to start getting low, especially since my kids love to take photos in games.

The biggest is 512gb or 1tb if you can afford it. Read the Nintendo specs it says the sd capacity is 2tb or could be more depending on firmware updates. What do you mean transfer? Just get a sd reader and make a folder on your computer and then move or copy the data back onto the new larger capacity card insert and Switch will run. But you should read the transfer instruction on Nintendo Support site to do this correctly.

The new 1tb cards retail for $450, but recently went on sale for $350 (I scooped one for Switch and one for Switch Lite). It’s crazy expensive but if you want the luxury of the space and have it to spend, it’s the best money can buy.
If you’re looking for more reasonably priced cards, the 512gb card is what you want. I saw it on sale on Amazon for $89 here 512gb micro SD $90 Amazon
And I definitely recommend buying as big as you can afford. I’ve already filled a 1tb card. They fill quicker than you think, as I’m sure you’ve noticed.
For easy transfer you have to copy the data directly onto the card right out of the packaging. If you put it in your switch to get formatted first, it won’t work. The games won’t show up and you’ll have to re-download everything one by one. I’ve been through this process many times as I’ve upgraded since launch, from 256gb, to 400gb, to 512gb and now 1tb.

@JaxonH Appreciated all the help guys, though I won't fill a 1 TB. I still buy physical games whenever possible. I think I'll be able to survive on a 512 if not a 256. The biggest question will be patches. I did see some deals, I'll probably pick one up soon.

I've got a 400GB card right now, I will probably upgrade to 1TB when the price drops to 200 dollars or less. I really want Nintendo to add a second SD card slot in a future hardware revision. It's not as though the slots are that big, I've seen people tear down and repair Switches before, there is room for one.

Is it hard to do a transfer when you get a new card?
First part of this is so true over time those can get full on the sdcard.
Second part you can just don't over write the second one with the old Switch format data otherwise the new system will say that is the old card and wants to format. I know I done this twice now. Just copy the data over and don't over write the new data and your saves and updates will be good to go. They don't say this but if you overwrite the data on the new formatted Nintendo folder with the old data the copied files will say it's the old System and will not work but if you don't over write those files and only copy the data and saves and some other extras that isn't new then your good to go. My Saves took the longest to copy over but the rest was quick. Being a 400gb card to 400gb took 6 hours total to copy to PC and back to Switch. So expect to wait long time doing this if your doing this with a large data save.
