I'm horrible at staying on one game, and finishing games. I'm playing at least eight games right now, although if you don't play a game for a month, are you will "playing" it all. Like, here's what I'm playing right now.
Darksiders II: I'm moving quickly and will finish soon.
Star Fox Adventures: Also really focusing and will finish soon.
The Outer Wilds: Have played a few hours but set it aside to focus on the two above. It's next on the list you l though.
Red Steel II: Freaking awesome, but I'm having trouble sticking to it. It just takes a while to boot it up from my Wii U.
Star Wars Republic Heroes: Super underrated game, but haven't played in a while.
Wildfire: Lost Access to my PS4 for a while and stop playing. Haven't played in a while, but I would really love to get back to it.
El Hijo: Same as above.
Lunar Silver Star Saga: I play this sporadically.
Attack of the Friday monsters: I'm actually really close to finishing and need to just do it.
Riviera the Promised Land: I can't tell you how many times I've restarted this game. I restarted again recently, but I've definitely realized I need to follow a guide. So I think I'll prioritize this pretty soon considering it is pretty great.
Snowrunner: Turns out that Snowrunner is a puzzle game. It's very good, and I very much enjoy it, but I basically have gotten stuck, so I haven't played it much recently.
There are a few others, but that's probably enough for this thread lol.
I'd say about three on the console and one on a handheld. Generally, one super-long game and then a couple other pick-up-and-play types to fill in when I don't have the time for the grind of the super-long game. Right now I'm about 150 hours into Doraemon Story of Seasons, and then I'm also playing Zaccaria Pinball and Puyo Puyo Tetris when I just want an hour or so of fun.
I usually have 2 - 5 active games at any one time I'll go back and forth between with some frequency, and then oodles of inactive games I'll stop playing for months/years and then eventually come back to. I don't really count the latter, though.
I almost always complete everything I start, though. Unless I really hate it. And even then, I'll sometimes still finish it.
At the moment, I'm playing:
Triangle Strategy (NG+)
The Legend of Heroes: Trails in the Sky (about a third of the way through the full game)
Kirby and the Forgotten Land (need to clean up a ton of optional and post-game content)
But I'll probably a couple more games to that list in the meantime.

Oh man. I've realized that I can't play long games any more. My preferred game length is 6 hours. I'm ok with 15. Anything above that has to be extremely convincing. There's just too much to play. And I play on average a couple of hours a day, maybe less. I didn't play anything yesterday.
Realistically maybe around 3, usually 2 but. Most of the time I'm flipping through stuff trying to find something to land on. Which usually involves a bunch of games you never complete like Mario Kart, Smash, Civ, Cities Skylines, Dirt etc
Right now I'm playing Middle Earth: Shadow of War and picking that up meant I dropped Arkham Knight which realistically I probably won't finish now. But I've also been playing a bit of Mario Kart 8 since that DLC dripped which will likely turn into Switch Sports soon
Usually 2-4. Of these, I usually have one more "casual" and one larger game (e.g. RPG) that I pick up multiple times a week. I might also be replaying a rather familiar game (usually Pokemon). Anything left over I might pick up once every few weeks or so, or might temporarily be on hold.
My current examples of these are Kirby, Anno: Mutationem, Pokemon Soul Silver, and Horizon Forbidden West, respectively.
Otherwise I have maybe a dozen games that I've started that I intend on continuing at some point.
I juggle 1-3 games at once on average, usually 2. They're usually different genres and lengths so I can use one to take a brief break from another if needed. I'm currently juggling Age of Calamity and Pokemon Brilliant Diamond on Switch and am thinking about throwing a 3DS game into the mix.
I usually finish games I start since I know my tastes at this point. The only exceptions are games I'm taking a chance on and decide they aren't for me.

@Tyranexx The only reason I don't finish a game I start is one, I didn't like it (Rare) Or two (The most common) I got caught up playing another game I said I was trying to play for just today LMAO, Its funny really.

@Snatcher I usually don't get caught up in other games that way and stick with what I'm playing lol. Part of it is I don't usually grab games on day 1 and prefer to grab them on discount a bit later.

It depends on what type of games I'm playing. If it's an involved single-player game, like BOTW, Stardew Valley, or any Metroidvania, that is usually exclusively what I play. However, if it's a lighter sort of game or one that isn't necessarily captivating me, then I tend to play two at a time. For example, right now I'm playing both Kirby and Lego Skywalker Saga. Neither game is super in-depth or time-consuming, so I switch back and forth between them.
