Just think the NA delay could be to implement improvements over the EU release - keep positive!
The story we have been told is that NoE and NoA are different entities and operate independently. The game was submitted to both and there is no rhyme or reason as to why NoE was able to provide a date and NoA hasn't. If there will be any improvements it would be because NoA saw the feedback that has been generated and then rejected the submission pending fixes. If that is the case there is no telling how long it will be before NA sees it.

I'll have to check later on tonight, but out of the box it only had four table demos so I think it wasn't too big. Of course now I have all the demos so I wouldn't be surprised if it's 1.5-2GB

So any reason why the Wii U and 3DS are the only platform not getting the DLC on time.

1597MB - the only non-retail release which is larger on my system is Trine 2, which frankly means there's no real excuse for not including all the demos as far as I'm concerned.
That would have meant the only reason you'd need to go to the eShop was for unlock codes. The five-item limit on DLC is clearly down to Nintendo - and I think that's nonsense, but I cannot imagine better eShop integration wouldn't be possible. Like I said I've bought loads of DLC on Wii and WiiWare titles and none of them required me to leave the game unless I lacked credit in my account.
At the very least I'd hope there would be a way for it to launch the eShop and have you arrive at the DLC page for the game from within the game - much like launching Miiverse from the Home channel in-game takes you to the Miiverse community for that game.
