I love the soundtracks for Super Mario Galaxy 1 and 2, 3D World, and Odyssey. They all have music that are a joy to listen to! (Some of my favorites from those games are the themes for Good Egg Galaxy, Starshine Beach Galaxy, Chainlink Charge, and New Donk City.) I would say they're all my favorite OSTs from any Mario game.
Sonic Mania's soundtrack is also really good. One of my favorite OSTs of all time, honestly! Lots of excellent remixes of classic Sonic tunes (shout-outs to the theme for Green Hill Act 2!) with great original pieces complementing them. Also like the music for Sonic 1-3, and even Sonic Adventure 2.

Mario Kart 8's OST is also really good, I'd say it's my favorite soundtrack from the series overall. And it's already my favorite Mario Kart game, lol.
One of the BEST Dance Dance Revolution 3rd Mix song, AFRONOVA by RE-VENGE (Naoki Maeda). This is also one of overplayed DDR songs on Arcade and i can play this song on Expert difficulty without seeing the arrows on the screen.
This is also one of the BEST Dance Dance Revolution EXTREME song, MEMORIES by Naoki feat. Paula Terry.
The Sims (PC) and its respective soundtracks. No other Sims game comes even remotely close to the magic of its soundtrack, though I also loved the soundtrack for The Sims: Bustin' Out for the GBA, and perhaps ironically, its best track was a retooled version of one of the tunes from the PC game. It never ceases to elicit feelings of nostalgia, joy, and melancholy.
Fire Emblem if/Fates has one of the finest soundtracks ever made. Even if one isn't interested in the game, there's so much to love about the soundtrack. Fire Emblem Awakening also has its share of gems, but I think if/Fates wins out overall.
I also loved the soundtrack of Pokémon Gold/Silver/Crystal back in the day, and I'm gutted that the HeartGold/SoulSilver OST set is long discontinued. Used copies are demanding unreasonably high prices on eBay, though I would have been absolutely happy to pay such amounts had they been brand new.
Guitar Vader were one of the people who worked on the Jet Set Radio soundtrack, to my knowledge they only ever did one tour outside of Japan and I missed it, I can't remember why I missed it but I feel like kicking myself for missing it. The Jet Set Radio soundtracks are a bit funny as it's music is so good but then for the Western release they will chuck in Rob Zombie randomly.
I go on about Earthbound too much as is but, not only does it have a conventionally great soundtrack, the use of samples and references really make it an interesting listen.

I'd go with the ones I've been daft enough to pick up on vinyl: Super Castlevania IV, OutRun, Streets of Rage 2, Silent Hill 2.
Also, Final Fantasy VII, Radiant Silvergun, and Road Rash on 3DO.
Mirror's Edge and Catalyst. I've probably listened to the soundtracks more than I've played the games. Plus I went and got more Solar Fields albums on top of that.

I’m amazed that no one has mentioned Chrono Trigger! The soundtrack to Zeal is one of my favourite video game tunes.
On days like today the bright blue skies are usually enough to have me humming the Great Sea theme from Wind Waker. I think Wind Waker has the best Zelda soundtrack.
Overall though the game with the best ever soundtrack is probably Castlevania Circle of the Moon on GBA.
It has all the best songs from the Castlevania series (the classic series with most consistently great soundtracks. Konami almost always had amazing soundtracks in the 8 but era) in there somewhere and the sound quality is very high.
Most NES Mega Man games also had great soundtracks.
A hipster choice for a great soundtrack would be Sim City on the SNES. It moves so gently from sleepy and whimsical “the world is passing you by” into the much jazzier feel of a big metropolis.
