I've put in at least 600 hours into Final Fantasy IX, but I've never actually sealed the deal; I haven't even reached the final boss. It's not that the game gets too tough for me or that I stop having fun, it's not ever a conscious decision. I always just put the controller after getting close to the end and then don't come back to it for years. Maybe some amateur psycho-babble about not wanting the game to really end might have something to do with it, but I really don't know why I never play it through to the very end.
And as much as I profess my love for Symphony of the Night-style Castlevania, I've never actually played SotN itself.

Your thing with Final Fantasy IX sounds like me with a lot of games. I want to come back to them, and I mean to, but there's something there that I can't always put a finger on that turns me off and stops me. But, often times it's a difficult spot that I don't feel like wrestling with. Awful thing is, sometimes it stops me from completing OTHER games. Super Mario Sunshine is the very definition for me of what you're going through with FF IX. There are some things about it, some difficulty some otherwise, that keeps me from picking it back up. And I like to complete the games of a series in order. So, by not finishing Sunshine, I refuse to play through Super Mario Galaxy. And Galaxy 2. So, I go through that also.
Something I intend to do one day is do a speed run on FF IX in order to get Excalibur II, but don't know if I'll ever actually do it.

I've never played a Fighting game... Right. (I did play Super Smash Bros Brawl, but once then I left it alone, and I played Street Fighter IV 3D but only as a demo.) But that's because I'm waiting for Smash Bros 3DSWiiU.
I've never finished a Monster Hunter game, even though I have all the PSP ones and Tri.
