I mostly use my switch docked, when I'm at home and want the best experience (usually if I get a new game I'll wait until it's dark and play in the living room on our big tv so I get to experience it the best I can) but if I'm traveling or at a friend's or relative's house I'll play it handheld because obviously there's no opportunity to dock. I also sometimes play handheld when it's really busy in my house, and then occasionally I just feel like it.
It really depends on my mood, but no matter what way I play it's still fun
