I got a generic USB GameCube adapter and generic USB ethernet adapter a while back off Amazon and they worked perfectly for months.
I haven't played docked much lately, but I bought some new Smash GameCube controllers at Best Buy recently and neither USB device is recognized by my Switch.
I plugged the new controllers in my GameCube, works. I plugged the GameCube adapter in to my Wii U with the same GameCube controllers and ran Smash perfectly fine. Switch, nothing.
I plugged the ethernet adapter to my phone (via USB to USB-C dongle) and was recognized. Switch, nothing.
Did Nintendo kill generic USB devices in the last few "stability" updates?
I also tried my Mayflash F500 arcade fightstick and that doesn't seem to register anymore with the Nintendo Switch either, yet does on my PS4 and Xbox One.
Is this related to the update that began to brick consoles that were using third party accessories. You use third party devices and accessories, Nintendo will punish you for them?
Either way, I have 3 very different third party accessories and none of them work any longer on the Switch, when earlier this year they all did. I even updated the firmware on my F500 fightstick to make sure it wasn't that.
Plug in an USB fan, light, charger or other such thing that can be powered on independently from the switch, and check if it's actually powering them on.

It's most likely due to the chipset itself not recognized by the Switch and not really a Switch problem. You bought a GameCube controller that wasn't a Switch Controller. So this needs to be set straight here. So unless the packaging says works for Nintendo Switch don't go thinking any and all controllers work that way.
I noticed in my phone I was actually telling a friend about the GameCube adapter back on September 1, 2018. So at some point recently, Nintendo did an update that disabled some (I can't speak for all) un-licensed USB accessories. My joy-con/pro controller charger plugged in to my dock seems to still run fine, but that might work differently than adapters and actual USB controllers.
One of these updates (if not all) did something to make them not work anymore:

I have 2 Switch consoles so it's not isolated either, they react the same way with these accessories. I might try a different dock to troubleshoot it further.
