They were both pre-orders. Mine, and someone else's. I consider myself lucky to have even gotten it I guess, but I find it a bit ridiculous that they didn't even get any more than that.

That seems to be common with Gamestop and amiibo. Having only enough for pre-orders, I mean. I wouldn't judge the situation on the first day. Sure, one particular Gamestop got only 2 Toad amiibo, but other stores and locations have more. One Toys R Us in particular that I saw a picture of had 20+ Toads as well as a good amount of the other SMB amiibo. They just released today. Give it time. There will most likely be plenty of each Super Mario amiibo at most retailers. After all, this is the Mario franchise we're talking about.
That's just how Gamestop handles amiibos. I asked them yesterday on what amiibos they'll have and they said they'll only have the ones preordered. They'll have a normal amount soon afterwards.
You're not really lucky, I went to Target and they had like 20+ Toads and all other Super Mario amiibos too.
From what I can tell so far it seems like they've made a lot more of these. I assume there's a lot of regional variation in stock but looking at the stock checker now all of the stores still say they have all of this new wave in stock. Even after a full day. For previous waves they've been sold out pretty much everywhere as soon as they went on the shelves.

My game stop also got 2 toads (both preordered), but I couldn't preorder, they only accepted 2. Also they haven't ever had any of the Fire Emblem Amiibo in stock.
